German Cucumber Salad

Sometimes ~even if it's still winter~ a crisp, crunchy, fresh side salad sounds good, and this German Cucumber Salad sure was good:@) What makes this different than other cucumber salads on my blog is the addition of lemon juice instead of vinegar. I took it one step further and added a little zest for color and an extra pop of flavor, the bites with zest were truly enjoyable! I look forward to taking another pic during the summer when I can use fresh cukes from the garden that don't have to be peeled, the green would be beautiful. I think you'll like this if you're fond of lemon and dill.
This is a quick fresh salad folks, best mixed and served, no marinating required.

I chose to use this zester/peeler to make strips of zest for big flavor and pretty presentation. 

German Cucumber Salad-adapted from Stumbling Upon Happiness
1/2 C sour cream
1 Tblsp fresh lemon juice
zest of 1/4 large lemon, reserve some for sprinkling on top
1/2 - 3/4 tsp dill-don't know if it calls for fresh or dried, I used 1/4 tsp dried, add more if desired
two 8"-ish cucumbers, sliced or chunked-can sub one large tomato
two slices of medium sized onion-yellow or red, around 1/8" thick to 1/4"(you know your crowd:@)
pinch of salt to taste
  1. Mix sour cream, lemon juice, half of the zest and dill. Gently stir in cukes and onion. Salt to taste and sprinkle reserved zest on top for color. 
  2. This salad is best served once it's mixed together, it will get watery the longer it sits.

  5. What, no hot sauce in it???? LOL Surprise~Surprise~
    I actually have everything on hand to make this TODAY. Thanks for the suggestion & you know, I never thought about needing to peel the grocery store/wax covered cuks. I usually take MOST of the green off anyway, but now I'll get rid of all of it. Off to the kitchen I go~~~~~~

  7. My MIL makes this salad, but she uses sliced cukes. I think I'd like the cubes even better! I love cucumbers!!!
