Chuck Roast Sloppy Joes-Slow Cooker Recipe

Our grilling plans were rained out so I decided to try these Chuck Roast Sloppy Joes using the slow cooker function of my 4 Qt Electronic Pressure Cooker. Loved that the slow cooker didn't heat up my kitchen:@) And yep, they are my Bread and Butter Jalapeno Pickles on top-Yum!

No doubt a chuck roast would be amazing but London Broil was already in the freezer... I've added the "thrifting" label to this post because my ShopRite puts London Broil on sale for $1.79/lb often. Now if you've tried it you know it can be tough, so it's a good candidate for low and slow (or pressure cooker) cooking. I even cut mine in half horizontally (if it was 1.5" think, I made it 3/4"). The only other change I made was to use 3 Tblsp dried onion instead of a fresh one, we prefer dried onion in the slow cooker.

I've made a few of Coleen's recipes and gotta say, this one's another keeper!

Chuck Roast Sloppy Joes-from Coleen's Recipes
2 lbs lean chuck roast, trim any extra fatty areas
1 C onion, chopped-I used 3 Tblsp dried onion flakes
2/3 C celery, chopped
2/3 C green bell pepper, chopped
2/3 C ketchup
1/2 C water
2 Tblsp Worcestershire sauce
1/4 tsp hot sauce
1 1/2 tsp salt
1/2 tsp pepper
1 tsp mustard powder
  1. Brown beef in frying pan and add to slow cooker.
  2. In same pan cook veggies until onion is almost translucent. Add to slow cooker.
  3. Mix everything else in a bowl and pour over meat/veggies.
  4. Cook on high for 4 hours or low for 8 hours-I used 8 hours.
  5. About 30 minutes before it's done cooking add a slurry of 1 Tblsp corn starch mixed with 1 Tblsp water to thicken the sauce.
  6. When meat is done either slice or shred (my preference) and return it to the sauce. 
  7. Serve over buns and enjoy!

  5. I love my electronic pressure cooker too, Lynn. In fact so much that I wore my first one out and promptly replaced it with an new 8 quart size. They are the greatest and my family would love this yummy sloppy joe version. Going after the pickle recipe now too! Thanks and Happy 4th...

  7. I don't have an electronic pressure cooker, but I bet I could make this in my Ninja cooker very easily! I'd just have to take the beef out of the pot after browning & put it onto a plate while I do the veggies in all that flavor & then combine them back together in the same pot & turn it from 'stove top' to 'slow cook'.

    Um...hold those Jalapeno pickles on mine, please? LOL

  13. I've never tried it with London broil; chuck roast is just such a flavorful (and perfect) cut for this recipe. I don't see any sauce in your sandwich (?). Thank you for mentioning my original post.

  17. You know I've never made Sloppy Joes with anything else but ground beef? This sounds delicious and I'll be watching for sales on chuck roast just to make this. I love the idea of a grown up Sloppy Joe or would that be Shoddy Joseph?
