Cilantro Salt-Preserving Cilantro

The cilantro in my garden was beginning to bolt and this Cilantro Salt was a good way to preserve some of it. Did you know the whole plant is edible? Root, stem, leaves, flowers and seeds, I did cut most of the stems away though.

On-line recipe suggestions for using it: lime rice, salt crusted potatoes, and on corn on the cob.
Use it as you would regular salt, I'll most likely add it to soups and salsas.
They say it will last for a year covered in the fridge-we'll see:@)
Chop it fine-I used a 3 cup food chopper, and then it's a simple ratio:
4 parts loosely packed cilantro to 1 part Kosher salt
Mix well and store tightly covered in the fridge.

  1. I've done this with whote basil leaves, and it worked pretty good. Have a good week! xo

  2. I love the idea and think it would be perfect for a southwestern soup I make. Plus, I just saw the comment above about using basil and want to try that.

I just saw those cute crocheted stars and love them, too!

  3. Interesting preservation technique. I will be anxious to hear if it does last a year, I think I am skeptical? I might try this with some basil. I am always trying to think of new ways to preserve summer's goodness. Happy Monday!

  5. I really like cilantro. My husband really dislikes cilantro. Alas, it doesn't get put into much around here.

    Best,

  7. Wow Lynn, this is a break through for me. I grow cilantro in a big pot and had no idea it could be preserved this way. Thanks!

  8. Hi Lynn,
when I first time smellt cilantro, I felt worse. But meanwhile I love it, especially in Indian Style food. Thank you for this idea to preserve it. I have it also in my garden.
    Best gretings, Johanna

  9. Your time is great! I always complain that my cilantro doesn't grow well, but this year it's growing like gangbusters and I need to do something with what I'm not using. Can't wait to try this.

  10. A year? I waste so much cilantro so this is perfect for me. We make huge batches of Lime Rice and tons of salsa and TexMex.
I'm excited about this one, Lynn.
    Thanks!

  12. What a fantastic idea...dried cilantro is nasty and fresh doesn't last long enough!

  13. You're just the smartest one! That's a great tip! Oh, I've meant to tell you - I bought a little pink spatula with a little pig's head on the handle and every time I pull it out of the drawer I think of you! ;)

  15. I'll have to try this Lynn! I just tossed a bunch away that was past its peak, I'll preserve it next time! Corn on the cob would be perfect for this!

  16. What a creative way to use your cilantro. Sounds good, too. I purchased a new cilantro plant for my herb garden this spring; shortly thereafter I found several little starts of it in my herb garden...apparently it self-seeded.

  18. This reminds me of herbes salées. Never thought of using the same technique for cilantro.
