Oven Roasted Tomatoes and Garlic with Pasta

Did the title get your attention? This is a good way to make store bought tomatoes tasty, and your kitchen smell great, any time of year! I've seen versions of this around Blogland and decided to play with making a smaller amount with reduced sugar and olive oil. I had six left over Roma tomatoes, I'm guessing three tomatoes per person is a good amount.

This is so good I may have eaten all of it! The garlic is so smooth and creamy, 
you can really taste the olive oil and I liked it with and without the basil.
Crazy as this sounds, I'll bet it would be great made on the grill, just close the lid. Maybe grill some chicken, make spaghetti on the side burner and you don't even have to heat up the kitchen!

Oven Roasted Tomatoes with Pasta
For six Roma tomatoes (two servings, simply double, etc.):
1 Tblsp olive oil - I use extra virgin
2 tsp sugar
2 garlic cloves, finely diced
S&P, generous pinches of each
Pasta prepared as you like it
Fresh basil if desired
  • Preheat oven to 375 degrees.
  • Cut tomatoes in half, remove seeds. Place on baking sheet, in baking dish or in a 10" cast iron pan.
  • Add everything except the pasta and basil, toss to coat.
  • Bake for 15 minutes, remove from oven and crush the tomatoes with potato masher or fork. 
  • Put back into oven for 25 minutes more.
  • Remove from oven and toss with pasta. Add basil if using.

      2. this looks so good! When our tomatoes start coming in, I can see making this a lot. And like you said, a perfect use of tomatoes in the off season as well. And it is nice to see a simple pasta dish with no meat.

      5. Oh this does look good. I really did plant tomato plants early enough to get early tomatoes. The rabbits ate EVERYTHING! Now I have to start all over! I am definitely going to try this out though!

      21. This looks delicious! I love finding ways to use up leftover veggies...I hate wasting them...even if they are going to my compost. Plus, reducing sugar is a huge plus in my book!
