Cooking Magazine Challenge-Corn Bread Bites

Hi everyone, Happy Super Bowl Sunday! Today I'm joining Suzy at Kitchen Bouquet for her Cooking Magazine Challenge, pick a recipe, make it and let everyone know what you think about it!
We're having chili today, isn't that a rule or something? Super Bowl Sunday=Chili:@)
So I'm making a recipe from Martha Stewart Living, the April 2010 issue
Corn Bread Bites, they should be made in a mini muffin pan.
Hope you love it if you try it!
Corn Bread Bites
1 C AP flour
1 C cornmeal
1/4 C plus 2 Tblsp sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 C buttermilk (I added 1 Tblsp vinegar to 1 C milk, let sit for 5 minutes)
1 egg
1/4 C safflower oil (I used veggie oil)

Flavor Combinations (makes enough for 1 cup or 1/3 of the batter):
Orange-Rosemary - 1/4 tsp grated orange zest, 1/4 tsp finely chopped Rosemary, 1/4 tsp pepper
Jalapeño-Cheddar - 3/4 tsp finely chopped jalapeño, 1/4 C plus 2 Tblsp grated cheddar cheese
Carmaelized Onion-Bacon - 2 Tblsp caramelized onion, 1 1/2 strips cooked bacon, crumbled
  1. Preheat oven to 375 degrees. Lightly butter a 12 cup mini muffin tin or coat with cooking spray.
  2. Whisk together first 6 ingredients.
  3. Combine the rest, add to dry, mix until just combined. 
  4. Divide into three batches and add the flavor combinations.
  5. Fill tins 3/4 full with batter. Bake until the tops are golden brown and a toothpick comes out clean, approx 12 minutes.
  6. Transfer to wire rack, let cool for 5 minutes, turn out muffins. Repeat until all the batter is used.

My Notes:
  • I chose to make this in my 10" cast iron skillet "Big Red"! I let Big Red heat up with the oven, then added about a Tblsp of butter and let that coat the pan. Took about 22 minutes to bake in the skillet.
  • I made the Jalapeño-Cheddar version because I thought that would go best with my chili. Increased the measurements for a whole batch. (I think that orange-Rosemary version would be amazing though!)
  • You can really smell the cheese as it comes out of the oven.
  • This is very good, it's sweet, and the crust is amazing! I would add more jalapeño the next time, but it seems like the perfect amount of cheese. I would make this again:@)http://kitchenbouquet.blogspot.com/2011/02/great-cooking-magazine-challenge.html

  2. Mmmmm, I love cornbread, and nothing goes better with chili than cornbread! I'll jot this one down, because although the Jiffy mix that I always use is OK, I'd love to try making them from scratch. I bet it tastes heavenly!

The crust is so much better! No chili here today - lots of finger foods but it does sound good! Thanks also for the nudge to throw out the challenge!

  8. We love cornbread. If I had some cheddar in the house I would make this for the game. WE have a whole Tex-Mex thing going today since the game is in Texas.

  9. Wonderful Lynn, I would make the Jalapeño-Cheddar version too. One of our favorite restaurants serves this in a basket while you wait for your food and "I SWEAR" I go there for the basket of Jalapeno cornbread! Thanks for the recipe So Much!

  13. Cornbread is wonderful! We have it regularly here.
    It also makes a splendid breakfast the next day, with a little butter and syrup! (if it's plain cornbread, that is.)

  16. Yum! I love cornbread...and this recipe sounds wonderful! Like you, I always use my iron skillet. I don't think you can get the same texture without it! And...doesn't everyone have chili for the Superbowl? Happy game watching!...Debbie

  22. I'm a southern girl (just got transplanted to the midwest) and cornbread is one of my favorites. I love it any style--even with cracklins!! We had hamburgers as our Super Bowl meal. Our team didn't win. In fact, our team didn't even play!! It was still fun.

  26. Oh Yum! I have made my cornbread with the jalepenos and cheese before and really like it. And I have used bacon in them but, I have to try the orange and rosemary. That sounds awesome!
