Lemon Zucchini Bread

Hey everyone! How about one more zucchini recipe, this one's a little different because it calls for lemon, I've had it forever and it's my favorite! You can make two loaves or muffins. My neighbor grew yellow zucchini this year so I used that but the colors are really beautiful when you use green zukes:@)

Lemon Zucchini Bread
3 eggs
2 C sugar
3/4 C oil
2 C zucchini, grated
2 1/2 C A/P flour
1 tsp baking soda
1 tsp baking powder
2 tsp vanilla
1-2 lemons, just the zest
  1. Preheat oven to 350 degrees.
  2. Grease and flour 2 loaf pans or put paper liners in cupcake pan.
  3. Mix everything except zucchini. Fold in the zucchini.
  4. Bake 45-50 minutes for bread, approx 22-25 minutes for muffins.
Notes:
  • You can definitely cut back on the sugar (actually I suggest it).
  • I estimated 1/3 of the recipe and ended up with 7 big muffins.
  • It's your call on how much lemon zest you'd like to use, I've made it with one and it's extra lemony with with two.

Lemon-Garlic Chick Pea Dip

Hey everyone! Here's a great summer-friendly dip from Rachael Ray and a reminder that the linky for the Celebrity Cook-Along will be up on Sunday! This easy dip is very fresh and lemony, I love it!
Lemon-Garlic Chick Pea Dip
(1) 15oz can Chick Peas, drained
1 clove garlic, cracked and skinned
1 lemon, zested and juiced
4-5 sprigs fresh thyme leaves, stripped from stems
S&P to taste
A few drops of hot sauce
1/4 C olive oil
Add everything except olive oil to a food processor, turn it on and stream in the EVOO till a nice dipping consistency.
Serve with celery, cucumber, bell pepper (any veggie), grapes and potato, pita or tortilla chips.

Notes:
  • I rinsed the chick peas.
  • You do need to add some salt.
  • I can see folks noshing on it around the pool, or it would be great for bridal/baby showers.
  • If you like lemon, you will like this dip!

The feathers are flying!

Hey everyone, It's time for Sheila's Rooster and Hen Party! I'm joining with an original piece of stained glass. I drew the pattern and made this one in browns and amber, it also has just a touch of red.

My son's girlfriend (at that time) gave me this great hand painted slate from a Craft Fair!
The slate was salvaged from the roof of an old horse barn from the 1800's in Vernon, NY.

Earl's on vacation, headed to the Jersey Shore... That ham bone ought to fit right in:@)

Philadelphia Pepper Hash

Hey everyone! Planning for Labor Day, a B-B-Q or looking for a great tailgating side dish? Oh yea, I can smell football season!!! I actually found this post unpublished from last summer, so I thought I'd share it for On The Menu Monday! It's great with sandwiches and goes well with grilled food.

What is Philadelphia Pepper Hash?
You could say it's a sweet, yet vinegary, no mayonnaise, alternative to cole slaw. 
It does require grating the veggies, or doing a lot of chopping, and has the consistency of relish.
I'm curious to see how this will look using my new KA food processor!

Philadelphia Pepper Hash
1 medium cabbage (Google says medium is 2 lbs-ish... I'd go light)
2 medium bell peppers (one red, one green)
1 small carrot (optional, I like the color)
1/2 C vinegar
1/2 C sugar
1 tsp mustard seed
1 tsp celery seed
1/2 tsp salt
1/4 tsp pepper

Grate cabbage and pepper (and carrot if using) till medium coarse.
Mix vinegar, sugar and spices in pan, place over low heat till sugar melts. Remove from heat.
Mix all, refrigerate over night.
Makes approximately 1 1/2 quarts.
