The idea behind this Confetti Coleslaw is to use up some vegetables, make a pretty salad, and bump up the nutrition level in a favorite side dish. The inspiration was a pretty red bell pepper in the garden, ~and~ a new kitchen toy from HSN, a hand crank slicer/shredder:@) Simply add as many different colored vegetables as you'd like, and use your favorite cole slaw dressing recipe. Or I think a good poppy seed dressing would be nice too. Ooooh, how about bleu cheese dressing... Yep, the options are endless!
