Honey, Lime and Cilantro Coleslaw

I served this Honey, Lime and Cilantro Cole Slaw as a side salad, but it would be great as a taco or pulled pork sandwich topper too. The flavors all went together well and I love how colorful it is. If I had a red onion on-hand, that would have added even more color. This was a different coleslaw and a good one to try, especially if you have some extra cilantro to use up:@) Just mix and serve, no real marinating time required.

Honey, Lime and Cilantro Coleslaw
2 C shredded cabbage with carrots
1/8-1/4 C onion, thinly sliced-you know your crowd
1 Tblsp fresh lime juice
1 Tblsp honey
1 1/2 tsp vinegar-I used red wine vinegar
1 1/2 tsp olive oil
1/4 tsp hot sauce
S&P to taste
~Mix everything and serve.
