Amish Pasta Salad

This Amish Pasta Salad may have a long list of ingredients, but they all go together well and this salad has lots of big flavors! It's a bit on the sweet side, yet there is still some tang from mustard, vinegar and sour cream. I also like the spices, especially adding paprika. I've used paprika as a garnish but rarely think of it as an ingredient. If your family is fond of creamy salads, don't hesitate to give this one a try folks, it will be on the menu for Sunday dinner when that starts back up again:@)
The only thing I might do differently next time is, I'd like to mash the yolks before mixing with everything else.
I think that would make a pretty salad that's lightly tinted yellow.
They say the full recipe makes about 12 C of salad, it's easily scaled down.
Leftovers? Add chicken, tuna or ham and call it lunch:@)

  1. I love macaroni salad, and being from PA, my Mom's was always on the sweet side. My mom always added some sugar to the dressing, and she did even in her potato salad. The recipe sounds delicious to me, Lynn, and I can see that it would come together quickly. I have a box of elbow pasta, as it just so happens, in my pantry. Yea me!! I hope you get your Sunday dinners back soon.
