Creamy Macaroni Cucumber Salad

It's been a while since I've found one of these little "Grandma's Recipe" gems, and I have to say we all enjoyed this Creamy Macaroni Cucumber Salad. Parmesan, Dijon mustard and pickle juice in macaroni salad? And of course dill is always a big hit with my crew. I can't wait until we can get garden cukes that don't need to be peeled, the green would add great color. If you'd like to try something different, add this one to your list folks:@)
I made 1/3 of a batch and subbed some whole wheat macaroni, used 1/2 tsp dried dill weed and 1/8 tsp garlic powder instead of fresh garlic.
Leftovers? I added tuna fish and called it lunch:@) 

Creamy Macaroni Cucumber Salad-from Chin Deep
1 lb macaroni, cooked al dente, drained, run under cold water, drained well
2 cucumbers, any type, sliced into quarters lengthwise, 1/4 dice
small onion, diced
2 tsp fresh garlic, minced
Dressing:
1 C sour cream
1 C mayonnaise
3 Tblsp Dijon mustard
4 Tblsp dill pickle juice or white vinegar-I used pickle juice
1/2 C grated Parmesan, either fresh or from the can-I used the can
3 Tblsp sugar
3 Tblsp fresh dill
1 tsp Lawry's Seasoned Salt
ground black pepper to taste
  1. Mix all dressing ingredients in large bowl.
  2. Add pasta, cukes, onion and garlic, mix well.
  3. Chill for 2 hours and serve.
Eat well and have a happy day:@)
