Easy Hamburger Soup-A low carb, diabetic friendly recipe

Every once in a while a recipe catches my eye and if it happens to be a little bit healthier for me, well that's a great bonus! And that was the case with this Easy Hamburger Soup recipe from everydaydiabeticrecipes.com. I'm always looking for more recipes that use cabbage and may have added a bit more than what was called for:@) This is a quick, very tasty and satisfying soup folks, don't hesitate to add it to your winter menu.
 I made a half batch and used a 15oz can of broth, no additional water, also added a hearty pinch of salt.

1 lb lean ground beef
1/2 C onion, chopped
1 C carrot, thinly sliced
1 C cabbage, thinly sliced
1/2 C celery, thinly sliced
3 C low sodium, fat-free beef broth
1 C water
2 Tblsp tomato paste
2 tsp Worcestershire sauce
1 tsp garlic powder
1/4 tsp black pepper
  1. Cook ground beef and onion in soup pot for 6-8 minutes or until browned.
  2. Add carrots, cabbage and celery, cook for 5 minutes.
  3. Add remaining ingredients, bring to a boil, reduce heat and simmer 25-30 minutes or until veggies are tender.
Eat well and have a happy day:@)

  14. I made the exact same soup for DH all the time, Lynn...except instead of cabbage, I use a drained & rinsed can of bean sprouts & a wee bit of soy sauce. At least, I USED to do that, prior to his kidney failure, so we are low sodium everything now. I agree, it is a yummy tasting soup!
